  • 1 ½ pounds sirloin or ribeye steak
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh parsley (chopped)

For the Noodles:

  • 8 oz egg noodles
  • 1 tablespoon butter

For the Spinach Salad:

  • 4 cups baby spinach
  • ½ cup cherry tomatoes (halved)
  • ¼ red onion (thinly sliced)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Egg Noodles: Boil salted water and cook noodles. Toss with butter.
  2. Prepare the Steak: Season steak, sear in skillet, add butter and garlic, baste, and slice.
  3. Make the Spinach Salad: Combine vegetables in a bowl. Whisk balsamic vinaigrette, drizzle over salad, and toss.
