For the Steak:
- 1 ½ pounds sirloin or ribeye steak
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 tablespoon fresh parsley (chopped)
For the Noodles:
- 8 oz egg noodles
- 1 tablespoon butter
For the Spinach Salad:
- 4 cups baby spinach
- ½ cup cherry tomatoes (halved)
- ¼ red onion (thinly sliced)
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the Egg Noodles: Boil salted water and cook noodles. Toss with butter.
- Prepare the Steak: Season steak, sear in skillet, add butter and garlic, baste, and slice.
- Make the Spinach Salad: Combine vegetables in a bowl. Whisk balsamic vinaigrette, drizzle over salad, and toss.
- Serve: Plate sliced steak over noodles with pan sauce and salad on the side.
