Description

These Green Goddess Tacos are a delightful vegetarian twist on traditional tacos. Filled with flavorful chickpeas and zucchini, topped with a creamy Green Goddess sauce, and finished with fresh toppings, they are a perfect healthy meal option.

For the tacos:

  • 1 tablespoon olive oil
  • 1 small red onion, thinly sliced
  • 1 zucchini, diced
  • 1 cup cooked chickpeas
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas

For the Green Goddess sauce:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 avocado
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped chives
  • 1 tablespoon lemon juice
  • 1 teaspoon white wine vinegar
  • 1 clove garlic
  • Salt and pepper to taste

Toppings:

  • 1 cup shredded lettuce
  • 1/2 cup sliced radishes
  • 1/4 cup crumbled feta cheese
  • Lime wedges for serving

Instructions

  1. In a skillet over medium heat, sauté the red onion in olive oil until softened. Add zucchini, cook until tender. Stir in chickpeas, garlic powder, cumin, salt, and pepper. Cook for 2 more minutes.
  2. For the Green Goddess sauce, blend yogurt, mayonnaise, avocado, parsley, cilantro, chives, lemon juice, vinegar, garlic, salt, and pepper until smooth.
  3. Warm tortillas, then spoon chickpea mixture onto them. Drizzle with sauce, top with lettuce, radishes, and feta. Serve with lime wedges.

Notes

  • For a vegan version, use dairy-free yogurt and skip the feta cheese.
  • The sauce can be made ahead and stored in the fridge for up to 3 days.
