  • 2 oz cream cheese (soft, room temperature)
  • 2 tablespoons heavy cream
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves (plus extra for garnish)
  • pinch of salt
  • freshly ground black pepper to taste

Instructions

  1. Preheat Grill: Preheat grill or grill pan to medium-high heat.
  2. Grill Apricots: Brush apricot halves with olive oil and grill cut-side down for 2–3 minutes until grill marks appear.
  3. Prepare Cheese: In a food processor, blend goat cheese, cream cheese, heavy cream, and salt until smooth.
  4. Make Thyme Honey: Warm honey with thyme leaves until fragrant; let cool slightly.
