For the Grilled Chicken:

  • 1 pound boneless skinless chicken breasts

For the Broccoli:

  • 3 cups broccoli florets
  • 1 tablespoon olive oil (for broccoli)

For the Rice/Quinoa:

  • 2 cups cooked brown rice or quinoa

For the Creamy Garlic Sauce:

  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1–2 tablespoons water (to thin, if needed)

Instructions

  1. Preheat the grill: Preheat the grill or grill pan over medium-high heat.
  2. Prepare the chicken: Rub chicken with olive oil, garlic powder, smoked paprika, salt, and pepper. Grill the chicken for 5–6 minutes per side, or until internal temperature reaches 165°F. Remove and let rest before slicing.
  3. Grill the broccoli: Toss broccoli florets with olive oil and a pinch of salt, then grill or roast at 400°F for 10–12 minutes until tender and slightly charred.
  4. Make the sauce: Whisk together Greek yogurt, mayonnaise, lemon juice, olive oil, garlic, salt, and pepper in a small bowl. Add water as needed to reach desired consistency.
  5. Assemble the bowls: Divide the cooked rice or quinoa between 4 bowls. Top with sliced grilled chicken and broccoli. Drizzle with creamy garlic sauce and serve warm.
