For the Grilled Chicken:

For the Broccoli:
- 3 cups broccoli florets
- 1 tablespoon olive oil (for broccoli)
For the Rice/Quinoa:
- 2 cups cooked brown rice or quinoa
For the Creamy Garlic Sauce:
- ½ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1–2 tablespoons water (to thin, if needed)
Instructions
- Preheat the grill: Preheat the grill or grill pan over medium-high heat.
- Prepare the chicken: Rub chicken with olive oil, garlic powder, smoked paprika, salt, and pepper. Grill the chicken for 5–6 minutes per side, or until internal temperature reaches 165°F. Remove and let rest before slicing.
- Grill the broccoli: Toss broccoli florets with olive oil and a pinch of salt, then grill or roast at 400°F for 10–12 minutes until tender and slightly charred.
- Make the sauce: Whisk together Greek yogurt, mayonnaise, lemon juice, olive oil, garlic, salt, and pepper in a small bowl. Add water as needed to reach desired consistency.
- Assemble the bowls: Divide the cooked rice or quinoa between 4 bowls. Top with sliced grilled chicken and broccoli. Drizzle with creamy garlic sauce and serve warm.
