Chicken Skewers:

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon chili flakes or Thai chili paste (optional for heat)
  • wooden skewers soaked in water for 30 minutes if grilling

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together soy sauce, fish sauce, lime juice, brown sugar, vegetable oil, garlic, ginger, and chili flakes or paste if using. Add chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  2. Grill the Skewers: Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers. Grill for 8–10 minutes, turning occasionally, until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  3. Serve: Serve hot with extra lime wedges, fresh cilantro, and peanut dipping sauce if desired.
