  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 (10 oz) can red enchilada sauce
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (15 oz) can corn (drained)
  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 2 cups beef broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar or Mexican blend cheese (plus more for topping)

Optional Toppings:

  • Sour cream
  • Chopped cilantro
  • Avocado
  • Crushed tortilla chips

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until soft.
  2. Add garlic and cook for 30 seconds.
  3. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if needed.
  4. Stir in the enchilada sauce, black beans, corn, diced tomatoes, beef broth, cumin, chili powder, paprika, salt, and pepper.
  5. Bring to a simmer and cook for 15–20 minutes, stirring occasionally.
  6. Reduce heat to low and stir in shredded cheese until melted and smooth.
  7. Taste and adjust seasoning as needed.
  8. Serve hot with your favorite toppings.
