- 4 cups Yukon Gold potatoes, peeled and diced

- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 cups sharp cheddar cheese, shredded

Instructions
- Melt the butter: In a large pot over medium heat, melt the butter.
- Sauté onion and garlic: Add the diced onion and sauté until softened. Stir in minced garlic and cook for another 1-2 minutes.
- Add remaining ingredients: Add potatoes, chicken broth, milk, heavy cream, Italian herbs, thyme, and smoked paprika. Season with salt and pepper.
- Simmer: Bring soup to a boil, then simmer for 15-20 minutes until potatoes are tender.
- Blend soup: Partially blend the soup using a potato masher or immersion blender for desired texture.
- Stir in cheese: Add shredded cheddar cheese and stir until melted.
- Finish and serve: Remove from heat, stir in parsley, and serve hot, garnished with sliced green onions.

- For a vegetarian version, use vegetable broth instead of chicken broth.
