  • 4 cups Yukon Gold potatoes, peeled and diced

  • 2 teaspoons dried Italian herbs

Instructions

  1. Melt the butter: In a large pot over medium heat, melt the butter.
  2. Sauté onion and garlic: Add the diced onion and sauté until softened. Stir in minced garlic and cook for another 1-2 minutes.
  3. Add remaining ingredients: Add potatoes, chicken broth, milk, heavy cream, Italian herbs, thyme, and smoked paprika. Season with salt and pepper.
  4. Simmer: Bring soup to a boil, then simmer for 15-20 minutes until potatoes are tender.
  5. Blend soup: Partially blend the soup using a potato masher or immersion blender for desired texture.
  6. Stir in cheese: Add shredded cheddar cheese and stir until melted.
  7. Finish and serve: Remove from heat, stir in parsley, and serve hot, garnished with sliced green onions.

  • For a vegetarian version, use vegetable broth instead of chicken broth.
