  • 1 cup shredded mozzarella cheese

  • 1 egg (beaten, for egg wash)
  • Olive oil or cooking spray for baking sheet

Instructions

  1. Prepare Oven and Baking Sheet: Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with olive oil or cooking spray, or line it with parchment paper to prevent sticking.
  2. Shape the Dough: On a floured surface, roll out the pizza dough into a rectangle about ¼-inch thick. Cut the dough into 6 to 8 equal rectangles or squares, depending on your preferred size for the pizza pockets.
  3. Add the Filling: Spoon approximately 1 tablespoon of pizza sauce in the center of each dough piece, making sure to leave a border around the edges. Sprinkle with shredded mozzarella cheese, add a few pieces of pepperoni, and lightly season with Italian seasoning for extra flavor.
  4. Seal the Pockets: Fold the dough over the filling to form a pocket shape—either rectangular or triangular. Use a fork to press and seal the edges tightly so the filling doesn’t leak out during baking.
  5. Apply Egg Wash: Place the sealed pizza pockets on the prepared baking sheet. Brush the top of each pocket with the beaten egg to help them achieve a beautiful golden color as they bake.
