Marinade:
- 1 ½ pounds boneless skinless chicken breasts or thighs (cut into 1½-inch pieces)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon chipotle peppers in adobo sauce (minced)
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- In a large bowl, whisk together olive oil, honey, chipotle peppers, lime juice, garlic powder, smoked paprika, salt, and pepper. Add chicken pieces and toss to coat well.
- Cover and marinate in the refrigerator for at least 30 minutes (up to 4 hours).
- If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- Preheat grill or grill pan to medium-high heat.
- Thread marinated chicken pieces onto skewers.
- Grill for 10–12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.
- Serve hot with lime wedges and your favorite sides.
Notes
- For extra flavor, brush remaining marinade over the skewers during grilling.
