  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 ½ cups arborio rice
  • ½ cup dry white wine (optional, or use extra broth)
  • 4 cups low-sodium vegetable or chicken broth, warmed
  • 1 bunch asparagus (about 1 pound), trimmed and cut into 1-inch pieces
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • zest of 1 lemon (optional, for brightness)

Instructions

  1. Set the Instant Pot to Sauté mode. Add olive oil and butter, then stir in the chopped onion. Cook for 3–4 minutes until soft.
  2. Add garlic and cook for 30 seconds. Stir in arborio rice and cook for 2 minutes, stirring frequently until the grains are slightly translucent.
  3. Pour in the white wine and cook for 1 minute until mostly evaporated. Stir in the warm broth and salt. Cancel Sauté mode, secure the lid, and cook on High Pressure for 6 minutes.
  4. While risotto cooks, steam or blanch the asparagus until tender-crisp (about 3 minutes), then set aside.
  5. Once risotto is done, allow a 5-minute natural release, then quick release any remaining pressure. Stir in Parmesan cheese, pepper, lemon zest (if using), and the cooked asparagus. Adjust seasoning to taste and serve warm.
