Instructions
- Season the Chicken: Pat the chicken breasts dry and season both sides evenly with salt, black pepper, and garlic powder to enhance the flavor.
- Sear the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5–6 minutes per side, or until they develop a golden crust and are fully cooked through. Remove the chicken from the skillet and set aside to keep warm.
- Cook the Peaches and Jalapeño: In the same skillet, add butter, diced peaches, and chopped jalapeño. Sauté for 2–3 minutes until the peaches begin to soften and the jalapeño releases its flavor.
- Prepare the Sauce: Stir in honey, apple cider vinegar, and Dijon mustard with the peaches and jalapeño. Allow the mixture to simmer for 3–4 minutes, letting the sauce thicken slightly and the flavors meld.
- Combine and Heat Through: Return the cooked chicken breasts to the skillet, spoon the peach-jalapeño sauce over them, and cook for another 2 minutes to reheat the chicken and blend all the flavors together.
