Description

These Keto Pop Tarts are a low-carb, gluten-free pastry delight that you can enjoy for breakfast or as a sweet snack. With a flaky almond flour crust and a fruity filling, topped with a vanilla icing, these homemade pop tarts are a healthier alternative to the store-bought version.


Ingredients

Dough:

    1 1/2 cups almond flour
    2 tablespoons coconut flour
    1 tablespoon powdered erythritol
    1/4 teaspoon xanthan gum
    1/4 teaspoon salt
    1/4 cup unsalted butter, cold and cubed
    1 large egg
    1/2 teaspoon vanilla extract
    3 tablespoons sugar-free jam (strawberry or raspberry)
    1 egg (for egg wash)

Icing (optional):

    2 tablespoons powdered erythritol
    1 teaspoon heavy cream (or almond milk)
    1/4 teaspoon vanilla extract
    sugar-free sprinkles (optional)

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare dough: In a food processor or mixing bowl, combine almond flour, coconut flour, erythritol, xanthan gum, and salt. Add cold cubed butter and pulse or cut in with a fork until the mixture resembles coarse crumbs. Add the egg and vanilla extract and mix until a dough forms.
  3. Shape and fill: Divide the dough, roll into rectangles, cut into squares, and place jam in the center of half the squares. Top with the remaining squares, seal the edges with a fork, and brush with beaten egg.
  4. Bake: Bake the pop tarts for 15–18 minutes until golden brown. Cool on the baking sheet.
  5. Make icing: Mix powdered erythritol with cream and vanilla extract. Drizzle over cooled pop tarts and add sprinkles if desired.

Notes

    Store in an airtight container at room temperature for up to 2 days, or refrigerate for a week. Reheat gently in a toaster oven or freeze unbaked pop tarts for later use.
