Main Curry:
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/2 teaspoon chili flakes (optional)
- 1 1/2 cups dried red lentils, rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 1/2 cups vegetable broth or water
- 1 teaspoon salt, or to taste
- juice of 1/2 lemon
- chopped fresh cilantro for garnish
Instructions
- Prepare the Curry: Heat oil in a large saucepan, sauté onion until golden. Add garlic, ginger, spices, cook until fragrant.
- Cook the Lentils: Stir in lentils, tomatoes, coconut milk, broth. Simmer for 25-30 mins until lentils are soft.
- Finish and Serve: Stir in lemon juice, season with salt. Garnish with cilantro before serving.
