Description

Lowcountry Chewies are deliciously chewy oatmeal cookies packed with coconut, pecans, and chocolate chips. These Southern treats are perfect for satisfying your sweet tooth!

Cookie Dough:

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Additional Mix-Ins:

  • 2 cups quick oats
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in eggs one at a time, then mix in vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture and mix until just combined.
  5. Stir in Mix-Ins: Add oats, coconut, pecans, and chocolate chips and mix well.
  6. Bake: Drop rounded tablespoons of dough onto baking sheets and bake for 10–12 minutes until edges are golden brown.
  7. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For chewier cookies, slightly underbake.
  • Walnuts or almonds can be used instead of pecans.
