  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the Salmon: Season salmon fillets generously with salt and pepper on both sides to enhance flavor before cooking.
  2. Sear the Salmon: Heat olive oil in a large skillet over medium heat. Place salmon fillets skin side down and sear for 4-5 minutes until golden brown, then flip and sear the other side for another 4-5 minutes. Remove the salmon and set aside.
  3. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  4. Deglaze with Chicken Broth: Pour in the chicken broth and use a spatula to scrape up any browned bits from the bottom of the skillet. Simmer the broth for 2-3 minutes to reduce slightly.
  5. Create the Creamy Sauce: Stir in the heavy cream, grated parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes if using. Let the sauce simmer for 3-4 minutes until it thickens and becomes creamy.
  6. Return Salmon to Skillet: Place the seared salmon fillets back into the skillet with the sauce, spooning sauce over the top. Simmer gently for 2-3 minutes to warm the fish through and meld flavors.
  7. Garnish and Serve: Sprinkle fresh chopped parsley over the salmon and sauce, then serve immediately with your favorite side dishes such as rice, pasta, or steamed vegetables.
