Ingredients
Scale
Salmon
- 4 salmon fillets (6 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
Sauce
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the Salmon: Season salmon fillets generously with salt and pepper on both sides to enhance flavor before cooking.
- Sear the Salmon: Heat olive oil in a large skillet over medium heat. Place salmon fillets skin side down and sear for 4-5 minutes until golden brown, then flip and sear the other side for another 4-5 minutes. Remove the salmon and set aside.
- Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant but not browned.
- Deglaze with Chicken Broth: Pour in the chicken broth and use a spatula to scrape up any browned bits from the bottom of the skillet. Simmer the broth for 2-3 minutes to reduce slightly.
- Create the Creamy Sauce: Stir in the heavy cream, grated parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes if using. Let the sauce simmer for 3-4 minutes until it thickens and becomes creamy.
- Return Salmon to Skillet: Place the seared salmon fillets back into the skillet with the sauce, spooning sauce over the top. Simmer gently for 2-3 minutes to warm the fish through and meld flavors.
- Garnish and Serve: Sprinkle fresh chopped parsley over the salmon and sauce, then serve immediately with your favorite side dishes such as rice, pasta, or steamed vegetables.
Notes
- For a dairy-free version, substitute heavy cream with coconut cream and omit parmesan cheese.
- Sun-dried tomatoes add a tangy sweetness; if unavailable, chopped roasted red peppers can be used as an alternative.
- Adjust red pepper flakes to control the heat according to your preference.
- Serve with a side of garlic mashed potatoes or a crisp green salad for a complete meal.
- Make sure not to overcook the salmon to maintain its moist and tender texture.
