Meatloaf Layer:

  • 1 1/2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup

Mashed Potato Layer:

  • 3 cups mashed potatoes, prepared and seasoned
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Prepare the meatloaf layer: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, thyme, and ketchup. Mix well and press into a greased 9×13-inch baking dish. Bake for 25–30 minutes.
  3. Add the mashed potatoes: Spread prepared mashed potatoes over the meatloaf layer, sprinkle with cheddar cheese.
  4. Bake: Return casserole to the oven and bake for an additional 15–20 minutes until cheese is melted.
  5. Rest and serve: Let it rest for 5 minutes before serving. Garnish with parsley if desired.

  • You can use store-bought mashed potatoes or make them fresh. For extra flavor, mix sour cream or garlic into the mashed potatoes.
