Ground Beef Stir Fry:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small red onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 1/4 cup crumbled feta cheese
- fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook for 6–8 minutes, breaking it apart until fully browned. Drain excess fat if needed.
- Add diced red onion and garlic to the skillet and cook for 2–3 minutes until softened.
- Stir in bell pepper, zucchini, and cherry tomatoes. Cook for another 5–6 minutes, stirring occasionally, until vegetables are tender.
- Mix in olives, oregano, cumin, salt, and black pepper. Stir well to combine and cook for 2 more minutes.
- Turn off the heat and stir in lemon juice and crumbled feta. Garnish with fresh parsley and serve warm.
Notes
- For a dairy-free version, omit the feta or use a plant-based alternative.
