Description

This Mediterranean Ground Beef Stir Fry is a flavorful and easy-to-make dish that combines ground beef with a variety of vegetables and Mediterranean spices. It’s a satisfying meal that can be served on its own or over rice, cauliflower rice, or quinoa.

Ground Beef Stir Fry:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 1/4 cup crumbled feta cheese
  • fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook for 6–8 minutes, breaking it apart until fully browned. Drain excess fat if needed.
  2. Add diced red onion and garlic to the skillet and cook for 2–3 minutes until softened.
  3. Stir in bell pepper, zucchini, and cherry tomatoes. Cook for another 5–6 minutes, stirring occasionally, until vegetables are tender.
  4. Mix in olives, oregano, cumin, salt, and black pepper. Stir well to combine and cook for 2 more minutes.
  5. Turn off the heat and stir in lemon juice and crumbled feta. Garnish with fresh parsley and serve warm.

Notes

  • For a dairy-free version, omit the feta or use a plant-based alternative.
