Instructions

Pour the caramel evenly over the chilled crust and return the pan to the fridge for 30 minutes to let the caramel set.
  3. Prepare the cheesecake layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, taking care to keep the mixture light and fluffy. Spread the cheesecake filling evenly over the set caramel layer. Refrigerate for at least 4 hours or preferably overnight to allow it to firm up.
