This Miso Carrot Soup is a comforting and flavorful dish that combines the sweetness of carrots with the umami richness of miso. Perfect for a cozy meal on a chilly day!

1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 pound carrots, peeled and sliced
- 4 cups vegetable broth
- 3 tablespoons white miso paste
- Salt and pepper, to taste
- Sesame oil, for drizzling
- Sliced green onions, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté for 4–5 minutes until onion is translucent.
- Add carrots and cook for another 3 minutes, stirring occasionally.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes or until carrots are very tender.
- Remove from heat. Using a blender or immersion blender, puree the soup until smooth.
- In a small bowl, whisk miso paste with a ladleful of hot soup until dissolved, then stir the mixture back into the pot off the heat.
- Season with salt and pepper as needed. Ladle into bowls, drizzle with sesame oil, and sprinkle with sliced green onions before serving.
Notes
- Use white miso for a milder, sweeter flavor, or red miso for a stronger, deeper taste.
- Always dissolve miso off heat to preserve its probiotics.
