Description

These No-Bake Coconut Cream Balls are a deliciously simple treat combining shredded sweetened coconut with condensed milk and a hint of vanilla. Perfect for a quick dessert or snack, they require no oven time and can be optionally coated in melted chocolate or additional coconut for extra flavor and texture.

Ingredients

Scale

Coconut Mixture

  • 2 cups shredded sweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract (or coconut extract)
  • 1/4 teaspoon salt

Optional Coating

  • 8 oz semi-sweet or dark chocolate, melted
  • Additional shredded coconut for rolling

Instructions

  1. Prepare the Coconut Mixture: In a mixing bowl, combine 2 cups of shredded sweetened coconut, 1/2 cup of sweetened condensed milk, 1 teaspoon of vanilla extract or coconut extract, and 1/4 teaspoon of salt. Stir well until the ingredients are fully incorporated. Cover and refrigerate the mixture for 30 minutes to make it easier to handle.
  2. Shape the Balls: Once chilled, scoop out 1-tablespoon portions of the coconut mixture and roll each portion between your palms to form smooth, round balls. Arrange the balls on a baking sheet lined with parchment paper to prevent sticking.
  3. Optional Coating: For added texture and flavor, roll the coconut balls in additional shredded coconut to coat them lightly, or dip them individually into melted semi-sweet or dark chocolate. Allow any excess chocolate to drip off before placing the coated balls back on the parchment-lined tray.
  4. Chill: Place the baking sheet with the coconut cream balls in the refrigerator and chill for 1 hour or until the balls are firm and set. This ensures the balls hold their shape when served.

Notes

  • Use sweetened shredded coconut for the best flavor and texture.
  • Both semi-sweet and dark chocolate work well for coating, adjust sweetness to your preference.
  • Store the coconut cream balls in an airtight container in the refrigerator for up to one week.
  • These can be made vegan by substituting sweetened condensed coconut milk or other vegan condensed milk alternatives.
  • For extra flavor, try adding a teaspoon of coconut extract instead of vanilla.
