Description

These Oatmeal Raisin Cookie Bars are a delightful treat that combines the classic flavors of oatmeal and raisin cookies in a convenient bar form. Chewy and packed with wholesome ingredients, these bars are perfect for snacking or dessert.

Ingredients

Scale

For the Cookie Bars:

  • 1 cup unsalted butter (softened)
  • 1 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup raisins
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla extract, beating until well combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Stir in the oats, raisins, and walnuts if using.
  4. Bake: Spread the batter evenly into the prepared baking dish. Bake for 25–30 minutes, or until golden brown and a toothpick inserted into the center comes out mostly clean.
  5. Cool and Slice: Cool completely in the pan before slicing into bars.

Notes

  • For chewier bars, slightly underbake.
  • Add chocolate chips or dried cranberries for a fun twist.
