Indulge in the rich, chocolatey goodness of these Olympic Village Chocolate Muffins. Perfect for a pre- or post-workout snack, these moist and decadent muffins are a delightful treat for any time of day.

Ingredients

Scale

Dry Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 cup vegetable oil
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract

Additional:

  • 1 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Prepare dry ingredients: In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. Combine wet ingredients: In a separate bowl, whisk together granulated sugar, brown sugar, eggs, Greek yogurt, oil, milk, and vanilla until smooth.
  4. Mix batter: Add wet ingredients to dry ingredients and stir just until combined. Gently fold in chocolate chips.
  5. Fill muffin cups: Divide batter evenly among muffin cups, filling each about 3/4 full. Top with extra chocolate chips if desired.
  6. Bake: Bake for 16–18 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
