Instructions

Once boiling, reduce the heat to low, cover the skillet, and simmer for 18 to 20 minutes, or until the rice is cooked through and the liquid has been absorbed.
- Finish and Serve: Remove the skillet from heat and fluff the rice mixture with a fork. Stir in the fresh lime juice for brightness. Sprinkle the shredded cheddar or Mexican blend cheese evenly over the top, cover the pan again, and let it sit for 2 to 3 minutes so the cheese can melt completely.
