Ground Beef Mixture:

  • 1 pound ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Additional Ingredients:

  • 8 oz uncooked pasta shells
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup cream cheese
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Sauté Onions and Beef: In a large skillet, sauté chopped onions in olive oil until soft. Add ground beef and cook until browned. Drain excess fat.
  2. Prepare Ground Beef Mixture: Stir in taco seasoning, diced tomatoes with chilies, and beef broth. Simmer and add uncooked pasta.
  3. Chill Overnight: Transfer the mixture to a baking dish, cover, and refrigerate overnight.
  4. Bake: Preheat oven to 375°F. Bake covered for 30 minutes, then add cream cheese and sour cream, top with cheddar, and bake uncovered until golden.
  5. Serve: Garnish with cilantro before serving.
