For the tarts:
- 1 package refrigerated pie crusts (or homemade pie dough)
- 1 pint fresh oysters (shucked and drained)
- 1 tablespoon butter
- 1 small shallot (minced)
- 1 clove garlic (minced)
- Salt and black pepper to taste
- Pinch of cayenne pepper (optional)
For the creamy sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 cup heavy cream
- 1/4 cup whole milk
- 1/4 cup grated Parmesan cheese
- 1 teaspoon lemon juice
- 1/2 teaspoon Dijon mustard
- 1 tablespoon chopped parsley (plus more for garnish)
- Salt and pepper to taste
Instructions
- Preheat oven: Preheat oven to 375°F (190°C). Roll out pie crusts and cut into rounds to fit mini muffin or tart pans. Bake until golden.
- Cook oysters: Cook shallot and garlic in butter. Add oysters and season. Cook until firm.
- Make sauce: Melt butter, whisk in flour, add cream and milk. Stir in Parmesan, lemon juice, mustard, and parsley. Season.
- Assemble: Fill tart shells with oyster mixture, top with sauce. Garnish with parsley. Serve warm.
