Main Ingredients:
- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 small yellow onion, finely diced
- 2 garlic cloves, minced
- 1 tablespoon freshly grated ginger
Additional Ingredients:
- 1 (8 oz) can water chestnuts, drained and finely chopped
- 2 green onions, sliced
- ¼ cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sriracha (optional)
- Salt and pepper to taste
- 1 head butter lettuce or iceberg lettuce, separated into cups
Instructions
- Heat the olive oil and cook chicken: Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned and fully cooked, about 5–6 minutes.
- Saute aromatics: Add diced onion, garlic, and ginger. Cook until fragrant and onion is soft.
- Add water chestnuts and green onions: Stir in chopped water chestnuts and green onions.
- Make the sauce: Whisk together hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha. Pour into the skillet and stir well.
- Combine and heat: Cook for another 1–2 minutes until heated through. Remove from heat.
- Assemble: Spoon chicken mixture into lettuce cups and serve immediately.

- For a vegetarian version, replace chicken with mushrooms or tofu.
