Description

Beef:

  • 2 pounds beef sirloin or flank steak, thinly sliced into strips

Sauce:

  • 2 tablespoons cornstarch
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil (or vegetable oil)
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper

Veggies:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced

Instructions

  1. Place the beef: Place the sliced beef in the bottom of the slow cooker.
  2. Prepare the sauce: In a small bowl, whisk together the cornstarch, soy sauce, beef broth, brown sugar, sesame oil, garlic, ginger, and black pepper until smooth.
  3. Coat the beef: Pour the sauce mixture over the beef and stir gently to coat.
  4. Add veggies: Add the sliced bell peppers and onion on top.
  5. Cook: Cover and cook on low for 5–6 hours or on high for 2.5–3 hours, until the beef is tender and the vegetables are cooked to your liking.
  6. Serve: Stir before serving and serve hot over rice or noodles.

Notes

  • For a thicker sauce, remove the lid during the last 30 minutes of cooking or stir in an additional cornstarch slurry.
