Cake:
- 1 box white cake mix
- 1 cup canned crushed pineapple, drained
- 1/2 cup coconut milk
- 1/4 cup vegetable oil

Cream Cheese Frosting:
- 1 (8 oz) package cream cheese, softened
- 1/4 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup crushed pineapple, drained
- Extra shredded coconut for garnish
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
- Prepare the Cake: Mix cake ingredients in a bowl, then stir in shredded coconut. Divide batter between pans and bake for 25–30 minutes.
- Make the Frosting: Beat cream cheese and butter, add powdered sugar and vanilla, then fold in crushed pineapple.
- Assemble the Cake: Spread frosting between layers and over the cake. Garnish with shredded coconut.
- Chill and Serve: Refrigerate the cake for at least 1 hour before serving.
