  • 3/4 cup shelled pistachios (roughly chopped)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Add mix-ins: Fold in chopped pistachios and white chocolate chips if using.
  5. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Bake for 10–12 minutes until edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
