Meat and Vegetables:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced

- 1 pound pork or beef, cut into small cubes

- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt

- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth

Instructions
- Sauté Vegetables: In a large pot or deep skillet, heat olive oil. Sauté onion until softened. Add bell peppers and garlic, cook for 2 minutes.
- Cook Meat: Add meat, cook until browned. Season with paprika, oregano, salt, and pepper.
- Add Rice and Liquid: Stir in rice, toast briefly. Pour in broth and diced tomatoes with juice. Bring to a boil, then simmer covered for 20 minutes.
- Finish Dish: Stir in peas, cover, and cook for an additional 5–10 minutes until rice is tender. Let rest, fluff with a fork, and garnish with parsley.
