Instructions

  1. Brown the Meat: In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef or lamb and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.
  2. Sauté Vegetables and Add Seasonings: Add diced onion, garlic, carrots, and celery to the pot. Cook for 5 to 7 minutes until vegetables soften. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper. Cook for another 1 to 2 minutes to meld the flavors.
  3. Simmer with Broth and Potatoes: Pour in the beef broth and add the diced potatoes. Bring the mixture to a boil, then reduce heat and let it simmer uncovered for 15 to 20 minutes, or until potatoes are tender when pierced with a fork.
  4. Finish and Serve: Stir in frozen peas and heavy cream or milk if using. Simmer for an additional 5 minutes to heat through and blend flavors. Taste and adjust seasonings as desired. Garnish with chopped fresh parsley before serving.
