Ingredients
Scale
Meat and Oil
- 1 pound ground beef or ground lamb
- 1 tablespoon olive oil
Vegetables and Aromatics
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cups diced potatoes
- 1 cup frozen peas
Seasonings and Liquids
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups beef broth
- 1/2 cup heavy cream or milk (optional for extra creaminess)
Garnish
- Chopped fresh parsley (optional)
Instructions
- Brown the Meat: In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef or lamb and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.
- Sauté Vegetables and Add Seasonings: Add diced onion, garlic, carrots, and celery to the pot. Cook for 5 to 7 minutes until vegetables soften. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper. Cook for another 1 to 2 minutes to meld the flavors.
- Simmer with Broth and Potatoes: Pour in the beef broth and add the diced potatoes. Bring the mixture to a boil, then reduce heat and let it simmer uncovered for 15 to 20 minutes, or until potatoes are tender when pierced with a fork.
- Finish and Serve: Stir in frozen peas and heavy cream or milk if using. Simmer for an additional 5 minutes to heat through and blend flavors. Taste and adjust seasonings as desired. Garnish with chopped fresh parsley before serving.
Notes
- For a vegetarian version, substitute lentils for the meat and use vegetable broth instead of beef broth.
- The soup thickens as it cools, making it an excellent option for leftovers or meal prep.
- You can use milk instead of heavy cream for a lighter soup.
- Feel free to add other herbs or spices, such as paprika or bay leaf, for additional flavor.
