Description

This Slovenian Sweet Omelette is a light and fluffy treat that balances the richness of eggs with a delicate sweetness, perfect for a dessert or a sweet breakfast. Made with separated eggs, a touch of vanilla, and lightly dusted with powdered sugar, it offers a delightful European breakfast experience that’s simple yet indulgent.

Ingredients

Scale

Omelette Mixture

  • 4 large eggs (separated)
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1/4 cup milk
  • pinch of salt

For Cooking & Serving

  • 1 tablespoon unsalted butter (for cooking)
  • powdered sugar for dusting
  • fresh berries, jam, or whipped cream for serving (optional)

Instructions

  1. Prepare the yolk mixture: In a large bowl, beat the egg yolks with sugar and vanilla extract until the mixture is pale and creamy. Then add the flour and milk, whisking until the batter is smooth and lump-free.
  2. Whip the egg whites: In a separate clean bowl, beat the egg whites with a pinch of salt until stiff peaks form, ensuring the whites are firm enough to give the omelette its signature fluffiness.
  3. Combine mixtures: Gently fold the whipped egg whites into the yolk mixture in batches. Use a careful folding motion to keep the batter airy and avoid deflating the egg whites.
  4. Cook the omelette: Heat the unsalted butter in a nonstick skillet over medium heat. Pour in the combined batter and spread it evenly. Cover and cook for 3–4 minutes until the bottom is golden and the top is just set. Carefully flip or fold the omelette in half. Alternatively, finish cooking the top under a broiler for 1–2 minutes instead of flipping.
  5. Serve and garnish: Slide the omelette onto a plate and dust generously with powdered sugar. Serve warm with optional fresh berries, jam, or whipped cream for an extra special treat.

Notes

  • This light, fluffy omelette is traditionally enjoyed as a dessert or sweet breakfast treat.
  • You can drizzle the finished omelette with honey or chocolate sauce for additional indulgence.
  • Handle the folding gently to maintain the airy texture of the batter.
  • Using a nonstick skillet helps prevent sticking and makes flipping easier.
