Beef:

  • 2 pounds beef chuck roast, trimmed and cut into large chunks

Additional:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 12 ounces egg noodles
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. Brown the Beef: Heat olive oil in a skillet, brown beef chunks, then transfer to the slow cooker.
  2. Cook in Slow Cooker: Add onion, garlic, broth, Worcestershire sauce, thyme, salt, pepper, and bay leaf to the slow cooker. Cook on low for 8 hours or high for 4–5 hours.
