Beef Roast:
- 3–4 pound beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Caramelized Onions:
- 2 large yellow onions (thinly sliced)
- 3 cloves garlic (minced)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1 tablespoon all-purpose flour
- 1 ½ cups beef broth
- 1 tablespoon Dijon mustard
Additional:
- 1 cup shredded Gruyère or Swiss cheese
- Chopped fresh parsley for garnish
Instructions
- Season and Sear the Beef: Season the beef roast with salt and pepper. Sear the roast in a skillet until browned.
- Caramelize Onions: Cook onions until softened and caramelized. Add garlic, flour, broth, Worcestershire sauce, balsamic vinegar, thyme, and Dijon mustard.
- Cook in Slow Cooker: Transfer the mixture to the slow cooker with the beef roast. Cook on Low for 8–9 hours or High for 4–5 hours.
- Finish and Serve: Shred the meat, mix with the gravy, top with cheese, and garnish with parsley before serving.
