  • 34 pound beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Caramelized Onions:

  • 2 large yellow onions (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • 1 tablespoon all-purpose flour
  • 1 ½ cups beef broth
  • 1 tablespoon Dijon mustard

Additional:

  • 1 cup shredded Gruyère or Swiss cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Season and Sear the Beef: Season the beef roast with salt and pepper. Sear the roast in a skillet until browned.
  2. Caramelize Onions: Cook onions until softened and caramelized. Add garlic, flour, broth, Worcestershire sauce, balsamic vinegar, thyme, and Dijon mustard.
  3. Cook in Slow Cooker: Transfer the mixture to the slow cooker with the beef roast. Cook on Low for 8–9 hours or High for 4–5 hours.
  4. Finish and Serve: Shred the meat, mix with the gravy, top with cheese, and garnish with parsley before serving.
