Ingredients

Scale

Main Ingredients

  • 2 large flour tortillas (burrito size)
  • 1 1/2 cups smoked beef rib meat, shredded and chopped
  • 1 cup cooked rice (white, brown, or Mexican-style)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sour cream
  • 1/4 cup salsa or pico de gallo
  • 1/2 avocado, sliced or mashed
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Hot sauce (optional)

Instructions

  1. Warm the Tortillas: Heat the flour tortillas in a skillet over medium heat or microwave them for about 20 seconds until they are warm and pliable, which makes them easier to roll without tearing.
  2. Prepare the Beef: In a large bowl, combine the shredded smoked beef rib meat with the lime juice, salt, and pepper. Mix gently to evenly coat the meat with the seasoning and lime juice for added brightness.
  3. Assemble the Burrito: Lay each warmed tortilla flat on a clean surface. Start layering with a scoop of cooked rice, followed by black beans, the seasoned smoked beef rib meat, shredded cheese, diced red onion, chopped cilantro, sour cream, salsa or pico de gallo, and finish with slices or mashed avocado. Add hot sauce if you want some extra heat.
  4. Roll the Burrito: Fold in the sides of the tortilla toward the center, then tightly roll the tortilla from the bottom up over the filling to create a compact burrito that holds together well.
  5. Optional Toasting: For a crispy finish, place each burrito seam-side down in a hot skillet over medium heat. Cook for 2 to 3 minutes on each side until the tortilla is golden brown and the cheese inside has melted slightly.
  6. Serve: Slice the burritos in half if desired and serve warm immediately for the best flavor and texture experience.

Notes

  • Prepare all filling ingredients in advance for quick and easy assembly at mealtime.
  • Enhance flavor and texture by adding grilled vegetables, corn, or pickled jalapeños inside your burrito.
  • Leftover burritos can be wrapped tightly in foil and reheated in an oven or air fryer to maintain crispiness.
