Pasta and Sauce

  • 8 ounces fettuccine pasta
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set pasta aside.
  2. Season the Steaks: Pat the steaks dry with paper towels. Rub both sides of each steak with 1 tablespoon of olive oil, then evenly sprinkle the Cajun seasoning, smoked paprika, and black pepper over both sides, pressing lightly to adhere.
  3. Sear the Steaks: Heat a large skillet over medium-high heat and add the remaining 1 tablespoon olive oil. When hot, add the steaks and sear each side for 3 to 4 minutes until cooked to your desired doneness. Transfer steaks to a plate and let them rest for a few minutes.
  4. Prepare the Alfredo Sauce: Reduce the skillet heat to medium and add the butter. Once melted, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring it to a gentle simmer.
  5. Finish the Sauce: Stir in the freshly grated Parmesan cheese, salt, and crushed red pepper flakes if using. Continue stirring until the sauce thickens slightly and is smooth.
  6. Toss Pasta in Sauce: Add the drained fettuccine to the sauce and toss thoroughly to coat. Add reserved pasta water a little at a time as needed to reach a smooth, creamy consistency.
  7. Serve: Slice the rested steaks and arrange them over the creamy Alfredo pasta. Garnish with chopped fresh parsley for a burst of color and freshness before serving.
