Pineapple Mixture:
- 3 cups fresh pineapple, finely diced

- 1 small red onion, finely chopped
Chutney Base:
- ½ cup apple cider vinegar
- ½ cup brown sugar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- ½ teaspoon ground cumin
- ¼ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoons fresh lime juice
Instructions
- Combine Ingredients: In a medium saucepan, combine pineapple, bell pepper, jalapeños, red onion, vinegar, brown sugar, ginger, garlic, cumin, cinnamon, and salt.
- Boil and Simmer: Bring to a boil over medium-high heat, then reduce heat to low and simmer for 25–30 minutes until thickened.
- Finish: Remove from heat, stir in lime juice, and let cool before serving or storing.
Notes
- Adjust jalapeños for desired heat level.
