  • ½ cup brown sugar
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons fresh lime juice

Instructions

  1. Combine Ingredients: In a medium saucepan, combine pineapple, bell pepper, jalapeños, red onion, vinegar, brown sugar, ginger, garlic, cumin, cinnamon, and salt.
  2. Boil and Simmer: Bring to a boil over medium-high heat, then reduce heat to low and simmer for 25–30 minutes until thickened.
  3. Finish: Remove from heat, stir in lime juice, and let cool before serving or storing.
