  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, chopped or 1 (10-ounce) package frozen spinach, thawed and drained
  • 4 large eggs
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup breadcrumbs (optional, for topping)
  • butter or oil for greasing the baking dish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a medium baking dish.
  2. Sauté onion and garlic: In a skillet, heat olive oil over medium heat and sauté the chopped onion until soft, about 5 minutes. Add the garlic and cook for 1 more minute.
  3. Cook spinach: Add the spinach and cook until wilted (if using fresh) or warmed through (if using frozen). Remove from heat and let cool slightly.
  4. Prepare cheese mixture: In a large bowl, whisk the eggs, then stir in the ricotta, mozzarella, Parmesan, milk, salt, pepper, and nutmeg. Add the spinach mixture and stir to combine.
  5. Bake: Pour the mixture into the prepared baking dish and smooth the top. If using, sprinkle breadcrumbs evenly over the top. Bake for 30–35 minutes or until the center is set and the top is golden brown. Let rest for 5–10 minutes before serving.

Notes

  • You can substitute cottage cheese for ricotta if preferred.
  • Add chopped cooked mushrooms or bell peppers for extra flavor.
