These Spinach & Feta Pastry Rolls are a delightful combination of flaky puff pastry filled with a savory mixture of spinach, onions, garlic, and feta cheese. Perfect for a party appetizer or a tasty snack.

Puff Pastry:
- 1 sheet puff pastry, thawed
Spinach Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 6 cups fresh spinach, roughly chopped
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup crumbled feta cheese
Additional:
- 1 large egg, beaten (for egg wash)
- Optional sesame seeds for topping
Instructions
- Preheat oven and prepare baking sheet: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Sauté onion and garlic: Heat olive oil in a skillet over medium heat. Sauté onion until softened, then add garlic and cook briefly.
- Cook spinach: Add spinach to the skillet and cook until wilted. Season with oregano, salt, and pepper. Remove from heat and let cool.
- Prepare filling: Mix in feta cheese with the spinach mixture.
- Assemble rolls: Roll out puff pastry and spread the spinach mixture over it. Roll up tightly and slice into pieces. Place on baking sheet.
- Bake: Brush the tops with beaten egg, sprinkle with sesame seeds if desired, and bake until golden brown and puffed.
- Serve: Enjoy warm or at room temperature.
Notes
- You can use frozen spinach (thawed and drained well) in place of fresh.
- These rolls make excellent party appetizers and can be prepared ahead, then baked just before serving.
