Steak:
- 1½ lbs (680g) sirloin or flank steak, cut into 4 portions
Other Ingredients:
- 2 tbsp olive oil
- 1 onion, thinly sliced
- 4 garlic cloves, sliced
- 1 can (14 oz) crushed tomatoes
- 1 tsp dried oregano
- ½ tsp red pepper flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup dry white wine (optional)
- ¼ cup fresh basil or parsley, chopped
Instructions
- Season the steak: Season steak portions with salt and pepper.
- Sear the steak: Heat olive oil in a large skillet over medium-high heat. Sear the steak on both sides, about 2 minutes per side, then remove from the skillet and set aside.
- Cook the onion and garlic: Reduce heat to medium and add the sliced onion and garlic to the same pan. Cook until softened, about 4–5 minutes.
- Prepare the sauce: Pour in the crushed tomatoes and white wine (if using). Stir in oregano and red pepper flakes. Simmer for 10 minutes, letting the sauce thicken.
- Simmer with steak: Return the steak to the pan, nestling it into the sauce. Cover and simmer on low for 10–15 minutes, or until steak reaches your desired doneness.
- Finish and serve: Sprinkle with fresh basil or parsley before serving.

- Best served with crusty bread, over pasta, or alongside roasted vegetables.
- For a richer sauce, add a splash of beef broth or a few olives and capers.
