Dry Ingredients:
- 3 cups old-fashioned rolled oats
- 1/2 cup chopped almonds
- 1/2 cup chopped pecans
- 1/2 cup shredded unsweetened coconut
- 1/4 cup chia seeds
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Wet Ingredients:
- 1 cup freeze-dried strawberries (lightly crushed)
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil (melted)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, almonds, pecans, coconut, chia seeds, cinnamon, and salt.
- Combine wet ingredients: In a separate bowl, whisk together melted coconut oil, honey/maple syrup, and vanilla.
- Combine and bake: Pour the wet mixture over the dry ingredients, stir to coat evenly. Spread on baking sheet and bake for 20–25 minutes.
- Cool and add strawberries: Let granola cool without stirring to form clusters. Mix in crushed strawberries once cooled.
- Store: Store in an airtight container for up to 2 weeks.
Notes
- Add white chocolate chips or dried strawberries for extra sweetness.
- For nut-free version, use sunflower seeds instead of nuts.
