Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease/flour a 9×5-inch loaf pan.
- Cream Butter and Sugar: In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add lemon juice, lemon zest, and vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Add dry ingredients to the butter mixture in three additions, alternating with sour cream.
- Prepare Strawberries: Toss diced strawberries with flour to coat, then gently fold into batter.
- Bake: Pour batter into the prepared pan and bake for 60–70 minutes until a toothpick inserted comes out clean.
- Cool and Glaze: Cool in pan for 10 minutes, then transfer to a wire rack. Whisk powdered sugar and lemon juice for the glaze, then drizzle over the cooled cake.
