Ingredients
Scale
For the Sugar Cookie Crust:
- 1 package (16.5 oz) refrigerated sugar cookie dough
- 1/4 cup all-purpose flour (for dusting)
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1 tablespoon all-purpose flour
For the Topping:
- 1 cup whipped cream
- Sprinkles (optional, for decoration)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan thoroughly, then lightly dust the sides with flour to prevent sticking.
- Make the Sugar Cookie Crust: Press the refrigerated sugar cookie dough evenly into the bottom of the prepared pan, using your fingers or a spoon to smooth it out and cover the entire base evenly. Bake for 12-15 minutes until the crust is golden brown. Remove from oven and allow to cool while preparing the cheesecake filling.
- Prepare Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add vanilla extract and continue mixing to incorporate fully.
- Add Eggs and Dairy: Add the eggs one at a time to the cream cheese mixture, beating well after each addition to ensure a smooth texture. Stir in sour cream, heavy cream, and flour, mixing until the filling is fully combined and smooth.
- Assemble and Bake Cheesecake: Pour the cheesecake filling evenly over the cooled sugar cookie crust. Smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggles when gently shaken, and the edges turn firm and golden brown.
- Cool Gradually: Turn off the oven and leave the cheesecake inside with the oven door slightly open. Allow it to cool gradually for about 1 hour to prevent cracking.
- Refrigerate: Once cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight, to fully set the filling.
- Add Toppings and Serve: Before serving, spread whipped cream evenly over the cheesecake top and decorate with sprinkles if desired. Slice and enjoy your Sugar Cookie Cheesecake!
Notes
- Let the cream cheese soften to room temperature before mixing to avoid lumps in the filling.
- Using a springform pan helps with easy removal of the cheesecake after baking.
- Chilling the cheesecake overnight enhances the texture and flavor.
- You can substitute sour cream with Greek yogurt for a slightly tangier flavor.
- Sprinkles are optional but add a festive touch perfect for celebrations.
