Ingredients

Summer Sausage:

8 ounces summer sausage, sliced into 1/4-inch rounds,

Andouille Sausage:

8 ounces andouille sausage, sliced into 1/4-inch rounds,

Other Ingredients:

1 tablespoon olive oil, 1 red bell pepper, sliced, 1 yellow bell pepper, sliced, 1 small red onion, sliced, 2 cloves garlic, minced, 1 cup cherry tomatoes, halved, 1 cup cooked corn kernels (fresh, frozen, or canned), 1 teaspoon smoked paprika, 1/2 teaspoon dried oregano, 1/4 teaspoon cayenne pepper (optional), salt and black pepper to taste, 2 tablespoons fresh parsley, chopped, lemon wedges for serving


Instructions

  1. Cook the Sausages: Heat olive oil in a large skillet over medium-high heat. Add the summer sausage and andouille sausage slices and cook for 3–4 minutes per side until lightly browned. Remove the sausages from the skillet and set aside.
  2. Sauté Vegetables: In the same skillet, add the bell peppers and red onion and sauté for 4–5 minutes until softened. Stir in the garlic and cook for 30 seconds.
  3. Add Remaining Ingredients: Add the cherry tomatoes and corn, cooking for 2–3 minutes until warmed through. Season with smoked paprika, oregano, cayenne (if using), salt, and pepper.
  4. Combine and Serve: Return the sausages to the skillet and toss everything together, cooking for another 2–3 minutes until heated through and well coated in seasoning. Garnish with chopped parsley and serve with lemon wedges on the side.
