Ingredients
Scale
Sweet Potato Filling:
- 1 pound sweet potatoes (about 2 medium), peeled and cubed
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Additional:
- 1 unbaked 9-inch pie crust
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Prepare sweet potatoes: Boil the sweet potatoes in a large pot of water for about 15–20 minutes, or until fork-tender. Drain and transfer to a large mixing bowl. Mash until smooth.
- Mix ingredients: Add the butter and stir until melted and incorporated. Beat in the sugar, milk, eggs, nutmeg, cinnamon, and vanilla until well combined and creamy.
- Fill pie crust: Pour the filling into the unbaked pie crust and smooth the top.
- Bake: Bake for 55–60 minutes, or until a knife inserted in the center comes out clean.
- Cool and serve: Let the pie cool completely before slicing. Serve at room temperature or chilled, with whipped cream if desired.
Notes
- For a richer flavor, use evaporated milk instead of regular milk.
- You can also roast the sweet potatoes instead of boiling for a deeper, caramelized taste.
