Ground Beef Mixture:

- 1/2 cup water
Other Ingredients:
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 (10-ounce) can diced tomatoes with green chilies
- 1/2 cup salsa
- 6 small flour or corn tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- Olive oil for greasing
- Chopped cilantro, sour cream, and sliced jalapeños for topping (optional)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook Ground Beef: In a large skillet, cook the ground beef and onion until beef is browned. Add garlic, then stir in taco seasoning and water; simmer until thickened.
- Add Ingredients: Add black beans, corn, diced tomatoes, and salsa. Stir to combine and heat through.
- Layer Casserole: In the baking dish, layer tortillas, meat mixture, and cheese three times.
- Bake: Cover with foil and bake for 20 minutes. Uncover and bake for an additional 5–10 minutes until cheese is melted.
- Serve: Let it sit for 5 minutes before slicing. Top with cilantro, sour cream, and jalapeños if desired.
Notes
- You can use low-carb or whole wheat tortillas as substitutes.
- Ground turkey or chicken can replace beef.
