Description

This Taco Ramen Bowl combines the comforting texture of ramen noodles with bold Mexican flavors for a quick and satisfying fusion meal. Ground beef simmered with taco seasoning meets tender ramen noodles, beans, and corn in a flavorful broth, topped with cheddar, sour cream, fresh green onion, and cilantro for a delicious, easy dinner.

Ingredients

Scale

Protein and Base

  • 1 tablespoon olive oil
  • 1/2 pound ground beef or ground turkey

Vegetables and Aromatics

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup diced tomatoes
  • 1 green onion, sliced
  • 1 tablespoon chopped fresh cilantro

Seasonings and Broth

  • 2 tablespoons taco seasoning
  • 1 tablespoon tomato paste
  • 4 cups low-sodium chicken or beef broth

Pasta and Toppings

  • 1 (3 oz) package ramen noodles (discard seasoning packet)
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Brown the Meat: Heat olive oil in a medium saucepan over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5–7 minutes.
  2. Sauté Aromatics: Add diced onion and minced garlic to the browned meat. Cook for 2–3 minutes until softened and fragrant.
  3. Add Seasonings: Stir in taco seasoning and tomato paste, mixing thoroughly to coat the meat evenly.
  4. Simmer Broth: Pour in the chicken or beef broth and bring to a simmer to meld flavors.
  5. Cook Noodles: Add the ramen noodles (discard the seasoning packet) to the simmering broth and cook for 3–4 minutes until tender.
  6. Add Beans, Corn, and Tomatoes: Stir in black beans, corn, and diced tomatoes. Let simmer for an additional 2 minutes to heat through.
  7. Season to Taste: Taste the broth mixture and adjust seasoning with salt and pepper as needed.
  8. Serve: Spoon the taco ramen into bowls and top with shredded cheddar cheese, sour cream, sliced green onion, and chopped cilantro. Serve hot and enjoy.

Notes

  • For a vegetarian option, substitute ground meat with plant-based ground meat or omit it entirely and use vegetable broth.
  • Add a dash of hot sauce or sliced jalapeños to increase the spice level.
  • Top with sliced avocado for extra creaminess and richness.
