  • 1 lb ground chicken
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Filling:

  • 1/2 cup shredded carrots
  • 1/2 cup diced red bell pepper
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

For Serving:

  • butter lettuce leaves

Instructions

  1. Cook the Chicken: Heat vegetable oil in a skillet, add ground chicken, and cook until browned. Add garlic and ginger.
  2. Make the Sauce: Stir in soy sauce, honey, rice vinegar, and sesame oil. Add cornstarch slurry and cook until thickened.
  3. Add Vegetables: Mix in shredded carrots and red bell pepper, cook until slightly softened.
  4. Finish and Serve: Remove from heat, stir in green onions and sesame seeds. Spoon chicken mixture into lettuce leaves and serve.
