For the Chicken:
- 1 lb ground chicken
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water
For the Filling:
- 1/2 cup shredded carrots
- 1/2 cup diced red bell pepper
- 2 green onions, sliced
- 1 tablespoon sesame seeds (optional)
For Serving:
- butter lettuce leaves
Instructions
- Cook the Chicken: Heat vegetable oil in a skillet, add ground chicken, and cook until browned. Add garlic and ginger.
- Make the Sauce: Stir in soy sauce, honey, rice vinegar, and sesame oil. Add cornstarch slurry and cook until thickened.
- Add Vegetables: Mix in shredded carrots and red bell pepper, cook until slightly softened.
- Finish and Serve: Remove from heat, stir in green onions and sesame seeds. Spoon chicken mixture into lettuce leaves and serve.
Notes
- You can substitute ground turkey or tofu for the chicken.
- Add chopped water chestnuts for extra crunch.
