Description
This Teriyaki Chicken Skillet Casserole with Broccoli is a delicious one-pan meal that’s perfect for busy weeknights. Tender chicken, broccoli, and rice cooked in a savory teriyaki sauce, topped with cheese for a comforting twist.
Ingredients
Chicken:
1 tablespoon olive oil, 1 pound boneless skinless chicken breasts or thighs (cut into bite-sized pieces), salt and black pepper to taste
Other Ingredients:
2 cups broccoli florets, 2 cloves garlic (minced), 1 cup uncooked white rice, 2 ¼ cups low-sodium chicken broth, ½ cup teriyaki sauce, 2 green onions (sliced), 1 teaspoon sesame seeds (optional), 1 cup shredded mozzarella or cheddar cheese (optional for a cheesy version)
Instructions
- Cook the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken with salt and pepper, then add to the skillet and cook for 5–6 minutes, until browned and cooked through. Remove the chicken and set aside.
- Prepare the Rice: In the same skillet, add the garlic and rice. Cook for 1–2 minutes, stirring to lightly toast the rice. Pour in the chicken broth and teriyaki sauce. Stir to combine, then bring to a simmer. Reduce heat to low, cover, and cook for 15 minutes.
- Finish the Dish: After 15 minutes, stir in the broccoli and return the cooked chicken to the pan. Cover again and cook for another 5–7 minutes, until the rice is tender and the broccoli is just cooked. If using cheese, sprinkle it over the top and place under the broiler for 2–3 minutes until melted and bubbly.
- Serve: Remove from heat and garnish with green onions and sesame seeds. Serve hot.
Notes
- Use instant rice to cut cook time by half.
- Add sliced bell peppers or snap peas for more veggies.
- Teriyaki flavor can be adjusted with more or less sauce depending on preference.
