Bread and Spread
- 1 Trader Joe’s sun-dried tomato focaccia roll (or similar focaccia bread)
- 1 tablespoon mayonnaise or aioli
- 1 teaspoon Dijon or stone-ground mustard
Filling
- 3–4 slices oven-roasted turkey breast
- 1–2 slices provolone or mozzarella cheese
- 1/4 avocado, sliced
- 2–3 slices tomato
- Small handful arugula or spinach
- Salt and pepper to taste
Instructions
- Prepare the Bread: Slice the focaccia roll in half horizontally to create the top and bottom sandwich halves.
- Make the Spread: In a small bowl, mix together the mayonnaise and Dijon or stone-ground mustard until well combined. Spread this mixture evenly on both cut sides of the focaccia bread.
- Assemble the Sandwich: Layer the bottom half of the focaccia with the turkey slices first, followed by the cheese, avocado slices, and tomato slices. Lightly season the avocado and tomato with salt and pepper for enhanced flavor. Then add a handful of arugula or spinach on top.
- Close the Sandwich: Place the top half of the focaccia bread over the fillings to close the sandwich firmly.
- Optional – Toast the Sandwich: For a warm, melty sandwich, toast it in a panini press or a skillet over medium heat for 2–3 minutes per side until the bread is golden brown and the cheese has melted. Serve immediately.
